How to make it

  • Preheat oven to 350°
  • Combine all ingredients in a medium bowl, mix until well blended. Roll heaping teaspoonful of dough into 1 1/2-inch balls.
  • Place 2 inches apart on cookie sheets.
  • Dip fork in granulated sugar, press criss cross patterns with fork tines on each ball, flattening to 1/2 inch thickness.
  • Bake 12 minutes or until set.
  • Cool on cookie sheets 2 minutes.
  • Remove cookies to wire racks; cool completely.

    Hmm. Not sure what went wrong here. I followed the recipe measurements exactly, had my oven to the proper temperature (double-checked with a second internal thermometer), followed all directions...and when I touch the cookies they crumbled like wet sand in my fingertips. So, I tried a second batch and added some flour and lessened the peanut butter. They were a little better, but still crumbled. Maybe it depends on the brand of the items. :(

    I'm looking for a PB cookie recipe that had only 4 ingredients. I THINK they were butter, eggs, peanut butter and sugar. Anyone heard of these? The ones I used to make were idiot simple and crispy, which I prefer over the chewy kind. These sound great but I'm going to try them with Peter Pan's new smooth PB made with honey roasted peanuts, 2/3 C light brown sugar, 1 egg and 1T of butter. Wish me luck...

    These are really similar to the recipe I make ( I dont use vanilla and add a little flour). I think this is a great recipe to make with little ones! When I make them, they also seem to disappear in the blink of an eye.

    Thanks for a simple and simply good recipe. I just baked these cookies with almond butter (in lieu of peanut butter) and 2 tbsp of raw sugar (instead 1 cup of sugar) -- Still came out very sweet and yummy. Next time, I'll try honey to make it a more paleo recipe.
