I saw this on Everyday Foods and had to have the recipe. It looks very simple to do with that pecan pie deliciousness without all of the trouble.

Ingredients
  • 1 cup unsalted butter
  • 1/2 cup confectioners sugar
  • 2 tsp. salt
  • 2 cups plus 2 tbls. unbleached flour
  • 1/2 tsp. baking powder
  • 2 large eggs
  • 1 1/2 cup packed brown sugar
  • 1 tbls. dark corn syrup
  • 2 cups pecans, coarsley chopped
  • 1 cup flaked sweetened coconut

Directions
  1. Preheat oven to 375 degrees.
  2. Using an electric mixer, beat butter, confectioners sugar, 1 tsp. salt until light and fluffy.
  3. Beat into the butter mixture, 2 cups of the flour until it forms a mass.
  4. Use a plastic sheet of Saran wrap to use when pressing the mass of dough into a 9X13 inch baking dish. Make sure the dough is pressed in the corners of the baking dish.
  5. Bake 20-25 minutes until lightly golden.
  6. Whisk remaining 2 tbls. flour, salt, and baking powder as a means of sifting.
  7. With mixer beat eggs, brown sugar, and syrup untillight. Fold flour mixture into the egg mixture.
  8. Then fold in nuts and coconut.
  9. Pour over crust and bake an additional 20-25 minutes or until filling is set.
  10. Run a metal spatula around edges of pan while warm, then transfer to a wire rack to cool.

Alterations


Instead of the dark corn syrup use molasses it will be healthier and will add a more robust flavor. Also use fresh coconut instead of the sweetened stuff. There is also a difference in those flavors as well.
