Cornmeal Cheddar Crackers

- 1 cup all-purpose flour shopping list
- 2 Tablespoons yellow cornmeal shopping list
- 1 teaspoons salt shopping list
- 1/4 teaspoon cayenne pepper shopping list
- pinch of freshly grated nutmeg shopping list
- 2 Tablespoons very cold unsalted butter cut into small pieces shopping list
- 1 cup finely grated cheddar cheese or feta or bleu cheese shopping list
- 1/4 cup plus 1 Tablespoon milk (preferably whole) shopping list
How to make it
- Combine the flour, cornmeal, salt, cayenne and nutmeg in the bowl of a food processor.
- Pulse to combine then add the butter and pulse until the mixture resembles coarse meal.
- Add the cheese and pulse until combined.
- With the machine running add the milk.
- Process until the dough comes together and is well combined.
- Transfer the dough to a clean work surface and shape into a 2 inch wide log.
- Wrap with plastic wrap and refrigerate for at least 24 hours.
- Heat the oven to 325 degrees.
- Slice the well-chilled log into 1/4 inch thick slices and transfer them to a baking sheet.
- Bake immediately, rotating the sheet half way through cooking, until the crackers are golden and firm in the center (about 25-30 minutes).
- Do not let the crackers get too dark around the edges.
- Transfer to a rack to cool.
- They can be made a day ahead of time and kept in an airtight container at room temperature.
- Makes: 20 crackers
