Ingredients

How to make it

  • Combine the flour, cornmeal, salt, cayenne and nutmeg in the bowl of a food processor.
  • Pulse to combine then add the butter and pulse until the mixture resembles coarse meal.
  • Add the cheese and pulse until combined.
  • With the machine running add the milk.
  • Process until the dough comes together and is well combined.
  • Transfer the dough to a clean work surface and shape into a 2 inch wide log.
  • Wrap with plastic wrap and refrigerate for at least 24 hours.
  • Heat the oven to 325 degrees.
  • Slice the well-chilled log into 1/4 inch thick slices and transfer them to a baking sheet.
  • Bake immediately, rotating the sheet half way through cooking, until the crackers are golden and firm in the center (about 25-30 minutes).
  • Do not let the crackers get too dark around the edges.
  • Transfer to a rack to cool.
  • They can be made a day ahead of time and kept in an airtight container at room temperature.
  • Makes: 20 crackers
