How to make it

  • Boil potatoes and garlic in large pot of salted water until potatoes are very tender, about 20 minutes.
  • Drain them and then return to the pot.
  • Mash and then immediately add the cheese, cream, chilies and butter.
  • Continue mashing until smooth and cheese is melted.
  • Season to taste with salt and pepper.
