White Cheddar and Chipotle Mashed Potatoes

- 2 1/2 pounds russet potatoes, peeled and cut into large pieces shopping list
- 4 garlic cloves, peeled shopping list
- 1 cup sharp white cheddar cheese, grated shopping list
- 1/2 cup cream shopping list
- 2 tablespoons chopped Chipotle chilies in adobo sauce shopping list
- 2 tablespoons butter shopping list
- salt and pepper shopping list
How to make it
- Boil potatoes and garlic in large pot of salted water until potatoes are very tender, about 20 minutes.
- Drain them and then return to the pot.
- Mash and then immediately add the cheese, cream, chilies and butter.
- Continue mashing until smooth and cheese is melted.
- Season to taste with salt and pepper.
