Ingredients
  • Caramel :
  • 100 g white sugar and 150 ml water - heat gently until rich golden without stirring .
  • Dip the base in cold water and pour in ovenproof dish to coat the base .
  • Custard :
  • 300 ml water
  • 90 g chopped creamed coconut
  • 2 eggs plus 2 yolks , 1 tbsp caster sugar - beaten well with a fork
  • 200 ml cream
  • Sliced bananas or slivers of fresh pineapples
  • 2 tbsp desicated coconut
  • Or whipped cream , wafers , fresh fruits

Directions
  1. Pre heat oven at 160 deg .
  2. Dissolve the water and coconut and stir well .
  3. Add to the beaten egg and stir the cream .
  4. Strain in a jug .
  5. In a roasting tin fill with water until halfway .
  6. Pour the dish with custard and cover with foil .
  7. Keep in the roasting tin .
  8. Cook for 50 mins or until set .
  9. Cool and chill overnight .
  10. Run a knife around the edge and
  11. Turn it on a serving plate .
  12. Serve with the fruits on top , sprinkled with coconut OR
  13. with whipped cream , fresh fruit of your choice and wafers .
