Co Co Nut Over This Creamy Pudding

- caramel : shopping list
- 100 g white sugar and 150 ml water - heat gently until rich golden without stirring . shopping list
- Dip the base in cold water and pour in ovenproof dish to coat the base . shopping list
- custard : shopping list
- 300 ml water shopping list
- 90 g chopped creamed coconut shopping list
- 2 eggs plus 2 yolks , 1 tbsp caster sugar - beaten well with a fork shopping list
- 200 ml cream shopping list
- Sliced bananas or slivers of fresh pineapples shopping list
- 2 tbsp desicated coconut shopping list
- Or whipped cream , wafers , fresh fruits shopping list
How to make it
- Pre heat oven at 160 deg .
- Dissolve the water and coconut and stir well .
- Add to the beaten egg and stir the cream .
- Strain in a jug .
- In a roasting tin fill with water until halfway .
- Pour the dish with custard and cover with foil .
- Keep in the roasting tin .
- Cook for 50 mins or until set .
- Cool and chill overnight .
- Run a knife around the edge and
- Turn it on a serving plate .
- Serve with the fruits on top , sprinkled with coconut OR
- with whipped cream , fresh fruit of your choice and wafers .
