How to make it

  • In a large bowl, combine the flour,sugar,baking soda and salt. In another bowl whisk the eggs,sour cream, butter,lemon peel and juice. Stir into dry ingredients just until moistened.Fill greased or paper lined muffin cups three- fourths full.
  • In a small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Sprinkle over batter.
  • Bake at 350 for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire rack. Whisk glaze ingredients together; drizzle over warm muffins.

    I made 1/4 a recipe of these this morning for breakfast. It filled 24 mini muffin cups to the top, and took 20 minutes to bake them. They are wonderful! Thanks for posting!
