Ingredients
  • 1 lb fish fillets preferable Filet of sole or flounder...the picture shows tilapia filets
  • salt and pepper
  • 3 - 4 tablespoons olive oil
  • 4 tbs butter(real butter not margarine....although I haven't tried it with margarine)
  • 1 tbs capers
  • juice of 1 lemon(I used bottled lime juice instead)
  • 1 tsp parsley

Directions
  1. season fish with salt and pepper
  2. heat oil in non stick pan over medium heat
  3. add fish and cook on one side until brown
  4. flip over once and brown on other side
  5. meanwhile heat only 1 tbs of butter in small saucepan
  6. add lemon juice parsley and capers
  7. simmer then remove from heat!!!!!!!
  8. ****I learned this tip from a youtube video*****
  9. add remaining butter and swirl around until it is melted
  10. ****this will create a creamy buttery sauce not oily***
  11. serve fish with butter sauce drizzled over

Tip: try browning in walnut oil and adding butter and all ingredients you listed for more of a brown butter sauce....adds an element of a nutty crisper flavor...but i like your recipe :)


What a great recipe! Simple and fast for everyday and yet I would gladly serve it to guests as well. Have you ever tried Basa fillets? It is a relative of the catfish and is my current favourite I think that it would be good for this recipe too.


We like to eat fish in our family....it's healthy and tasty! :) This sounds really good! :)
