How to make it

  • Mix together vinegar, wasabi powder, sugar, salt, and soy sauce in a large bowl.
  • Add the vegetables, toss to coat.
  • Chill 1 hour before serving.

    My CSA has been adding kohlrabi to the boxes. I got a green one the first week and last week a purple one. I think the purple one would show off nicely in this slaw recipe. You didn't mention it but I will also be adding the shredded kohlrabi greens as they are edible and full of goodness. This will give me a 2fer because i have never had daikon radish in a recipe either.

    Wasabi powder is powdered horseradish, do you suppose a reasonable substitute would be freshly ground horseradish? I have an awful lot of freshly ground horseradish that needs loving. My guess would be 2 tbsp of fresh. Your thoughts chef??

    I've only tried kohlrabi once, and I liked it. I can't wait to try this recipe. I love slaw. The addition of wasabi powder sounds awesome!

    This is an excellent recipe-a definate keeper! We used to have a large garden in another house and we grew kohlrabi. It never made it into the house-not once. I used to keep a knife in the garden so it would be nearby when I picked veggies and the kohlrabi would be picked, cleaned and shared on the spot. Now I have to buy it at the market and I would love to try your recipe once the kohlrabi comes into season again.
