How to make it

  • Mix vinegar, herbs, and oil together with the garlic in a reclosable plastic bag.
  • Add portobello mushrooms and marinate for at least 15 minutes.
  • Run a two skewers through the red onion slices to hold in place.
  • Prepare medium hot charcoal fire.
  • Grill portobello mushrooms five minutes per side along with the onions.
  • Brush generously with extra marinade while grilling.
  • Top mushrooms with cheese and melt.
  • Toast buns, add a smear of hummus to the bottom bun.
  • Put a little bed of shredded lettuce on hummus.
  • Top with mushrooms/cheese and grilled onion.
  • Add top toasted bun.
