Grilled Pineapple

- 1 large ripe pineapple shopping list
- 3 tablespoons honey shopping list
- 1/2 cup orange juice shopping list
- 1 tablespoon fresh squeezed lemon or lime juice shopping list
- 1/2 teaspoon fresh ground pepper shopping list
- Optional: vanilla ice cream and mint to garnish shopping list
How to make it
- Trim, core, and peel pineapple, slice into 3/4 inch slices
- Remove core in each slice and pepper both sides of slices
- In a small bowl, combine honey, orange, and lemon or lime juice (heat in microwave to combine, add corn starch if you want it to thicken).
- Preheat barbecue grill. Either oil or spray the grill rack with non-stick cooking spray. Place pineapple slices on the grill and cook approximately 3-4 minutes on each side (turning so that grill marks are on both sides) until the pineapple becomes fragrant and starts to dry out on the surface. NOTE: Don't overcook, or they'll turn mushy.
- Remove from the grill and brush with glaze one, serve with vanilla ice cream and mint if desired. Serve and enjoy!
