Ingredients

1 large ripe pineapple

3 tablespoons honey

1/2 cup orange juice

1 tablespoon fresh squeezed lemon or lime juice

1/2 teaspoon fresh ground pepper

Optional: vanilla ice cream and mint to garnish

Directions

Trim, core, and peel pineapple, slice into 3/4 inch slices

Remove core in each slice and pepper both sides of slices

In a small bowl, combine honey, orange, and lemon or lime juice (heat in microwave to combine, add corn starch if you want it to thicken).

Preheat barbecue grill. Either oil or spray the grill rack with non-stick cooking spray. Place pineapple slices on the grill and cook approximately 3-4 minutes on each side (turning so that grill marks are on both sides) until the pineapple becomes fragrant and starts to dry out on the surface. NOTE: Don't overcook, or they'll turn mushy.

Remove from the grill and brush with glaze one, serve with vanilla ice cream and mint if desired. Serve and enjoy!
