Ingredients
  • 4 Walleye fillets
  • 1/2 cup corn meal
  • 1/2 cup fresh grated Parmesan cheese
  • 1 tablespoon freshly ground black pepper
  • Optional Sauce:
  • 1/2 cup cream
  • 1 tablespoon freshly minced garlic
  • Freshly ground sea salt & white pepper, to taste

Directions
  1. Preheat the oven to 350 degrees
  2. Mix corn meal, Parmesan, and pepper in a bowl.
  3. Coat both sides of the fish with the mixture
  4. Coat a pan with vegetable oil
  5. Bake the fillets for 15 minutes or until cooked through
  6. Now comes the unhealthy (optional) part.
  7. Heat a saucepan over medium heat.
  8. Pour 1/2 cup of cream and 1 tablespoon garlic into a saucepan and bring to a rolling boil. As it begins to boil, reduce the heat and stir constantly.
  9. Reduce the liquid by half and salt & pepper to taste.
  10. Plate the Walleye and top with the cream sauce
  11. Enjoy!
