If you love goat cheese, you will go ga-ga over this pasta! This is also a good dish to serve because it comes out looking very pretty with the spinach leaves spread at the bottom of the serving dish.

Ingredients
  • 1 lb. whole wheat pasta
  • 3 garlic cloves
  • 2 oz. goat cheese
  • 1 oz. cream cheese
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 6 oz. baby spinach
  • 2 TBS. parmesan (to sprinkle)

Directions
  1. Bring salted water to boil and add noodles.
  2. Mince garlic in food processor.
  3. Add goat cheese, cream cheese, salt, pepper and 1/2 of spinach leaves.
  4. Blend until creamy and set aside.
  5. Put spinach leaves on inside of bowl.
  6. Drain pasta and reserve 1 cup.
  7. Toss pasta to coat with sauce and add H20 as needed.
  8. Transfer to dish with spread spinach to serve.
