Easy Lunchbox Pita Sandwiches Recipe
These are simple chickpea filled pita sandwiches suitable for carrying in your lunchbox. Perfect for picnics! :-)

Ingredients
  • 1 16 oz / 450 g can chick peas, rinsed, drained and mashed
  • 1/3 cup chopped celery
  • 1 tsp minced onion
  • 2 tsp pickle relish (or mixed pickle)
  • 2 tsp egg-free mayonnaise
  • 1 tsp mustard
  • Dash of garlic powder
  • 4 whole wheat pitas
  • Lettuce, tomato slices, shredded carrots, sliced cucumbers, sliced peppers, and other vegetables as desired for suitable toppings.

Directions
  1. Place the chickpeas, celery, onion, relish, mayonnaise, mustard and garlic powder in a bowl and mix well.
  2. Cut the pitas in half crosswise and open up into pockets.
  3. Fill each pita pocket with 1/4 of the chickpea spread, top with lettuce, tomato or other veggies and serve.
  4. For lunchbox sandwiches, pack the spread and vegetables seperately in plastic containers and assemble onto the pita bread. Great for picnics and lunches on the go.
