Easy Lunchbox Pita Sandwiches

- 1 16 oz / 450 g can chick peas, rinsed, drained and mashed shopping list
- 1/3 cup chopped celery shopping list
- 1 tsp minced onion shopping list
- 2 tsp pickle relish (or mixed pickle) shopping list
- 2 tsp egg-free mayonnaise shopping list
- 1 tsp mustard shopping list
- Dash of garlic powder shopping list
- 4 whole wheat pitas shopping list
- lettuce, tomato slices, shredded carrots, sliced cucumbers, sliced peppers, and other vegetables as desired for suitable toppings. shopping list
How to make it
- Place the chickpeas, celery, onion, relish, mayonnaise, mustard and garlic powder in a bowl and mix well.
- Cut the pitas in half crosswise and open up into pockets.
- Fill each pita pocket with 1/4 of the chickpea spread, top with lettuce, tomato or other veggies and serve.
- For lunchbox sandwiches, pack the spread and vegetables seperately in plastic containers and assemble onto the pita bread. Great for picnics and lunches on the go.
