This dressing is great over a salad of spinach, mango and jicima mixed with other fruits or lettuce and fetta cheese.

Ingredients
  • 3/4 cup vegetable oil
  • 1/3 cup fresh lime juice
  • 1/2 teaspoon grated lime zest
  • 1/2 cup chopped cilantro
  • 1 jalapeño pepper, chopped
  • 1/2 teaspoon salt

Directions
  1. Combine all in a blender, whiz until smooth.
  2. We like this over shoestring or sliced Jicima...
  3. Jicima is a potato like root veggie that taste like a cross between a potato and a apple.. Crunchy... Here we use it all the time in our salads.
