How to make it

  • 1. Trim the feathery leaves from the fennel and reserve. Slice the rest lengthwise into thin wedges.
  • 2. Cut 1 lime into wedges and set aside. Finely grate the rind and squeeze the juice of the other lime and add 1/2 of each to the scallops. Season them with salt and pepper. Set aside.
  • 3. Place the egg yolk and remaining lime zest and juice in bowl and whisk until pale and smooth.
  • 4. Gradually whisk in the melted butter and continue whisking until thick and smooth. Finely chop reserved fennel leaves and stir them in with salt and pepper.
  • 5. Prepare grill. Position lightly oiled grill rack over hot coals. Brush fennel wedges with olive oil and cook over high heat for 3-4 minutes turning once.
  • 6. Add the scallops and cook for a further 3-4 minutes, turning once
  • 7. Serve with the lime and fennel butter and lime wedges.
  • Hint: thread small scallops on a skewer to make cooking easier.
