Scallops With Lime Butter And Fennel Recipe

Ingredients
  • 1 head fennel
  • 2 limes
  • 12 large sea scallops( if you can only get bay scallops remember they are a lot smaller so you need to triple or quadruple the amount depending on the scallop size), cleaned
  • 1 egg yolk
  • 6 Tbs. melted butter
  • olive oil for brushing
  • sea salt and ground black pepper

Directions
  1. 1. Trim the feathery leaves from the fennel and reserve. Slice the rest lengthwise into thin wedges.
  2. 2. Cut 1 lime into wedges and set aside. Finely grate the rind and squeeze the juice of the other lime and add 1/2 of each to the scallops. Season them with salt and pepper. Set aside.
  3. 3. Place the egg yolk and remaining lime zest and juice in bowl and whisk until pale and smooth.
  4. 4. Gradually whisk in the melted butter and continue whisking until thick and smooth. Finely chop reserved fennel leaves and stir them in with salt and pepper.
  5. 5. Prepare grill. Position lightly oiled grill rack over hot coals. Brush fennel wedges with olive oil and cook over high heat for 3-4 minutes turning once.
  6. 6. Add the scallops and cook for a further 3-4 minutes, turning once
  7. 7. Serve with the lime and fennel butter and lime wedges.
  8. Hint: thread small scallops on a skewer to make cooking easier.
