Scallops with Lime Butter and Fennel

- 1 head fennel shopping list
- 2 limes shopping list
- 12 large sea scallops( if you can only get bay scallops remember they are a lot smaller so you need to triple or quadruple the amount depending on the scallop size), cleaned shopping list
- 1 egg yolk shopping list
- 6 Tbs. melted butter shopping list
- olive oil for brushing shopping list
- sea salt and ground black pepper shopping list
How to make it
- 1. Trim the feathery leaves from the fennel and reserve. Slice the rest lengthwise into thin wedges.
- 2. Cut 1 lime into wedges and set aside. Finely grate the rind and squeeze the juice of the other lime and add 1/2 of each to the scallops. Season them with salt and pepper. Set aside.
- 3. Place the egg yolk and remaining lime zest and juice in bowl and whisk until pale and smooth.
- 4. Gradually whisk in the melted butter and continue whisking until thick and smooth. Finely chop reserved fennel leaves and stir them in with salt and pepper.
- 5. Prepare grill. Position lightly oiled grill rack over hot coals. Brush fennel wedges with olive oil and cook over high heat for 3-4 minutes turning once.
- 6. Add the scallops and cook for a further 3-4 minutes, turning once
- 7. Serve with the lime and fennel butter and lime wedges.
- Hint: thread small scallops on a skewer to make cooking easier.
