Gluten Free Pound Cake

- 1 cup unsalted butter , room temperature shopping list
- 3 cups sugar shopping list
- 6 eggs shopping list
- 3 cups Wendy Wark's flour mix******* shopping list
- 1/2 teasp xanthan gum shopping list
- 1/4 teasp.baking powder shopping list
- 3/4 cup sour cream shopping list
- 1 1/2 teasp. vanilla extract shopping list
- powdered sugar for dusting the top of cake shopping list

- this cake requires you to make the Wendy Wark's flour mix yourself shopping list
- be sure to use both white and brown rice flour... shopping list

- this is a dense cake.... shopping list
How to make it
- cream butter and sugar in a medium bowl on high speed until pale in color and light in texture
- add eggs, one at a time, blending well after each addition
- sift flour mix, xanthan gum, and baking powder in a small bowl
- add flour mixture to creamed mixture, alternating with sour cream
- add vanilla and mix well
- pour into a buttered and floured 10-inch tube pan or a 12- cup bundt pan
- preheat oven to 350' F
- bake for 1 hour and 30 minutes or until a toothpick inserted near center comes out clean with a few crumbs clinging to it.
- let cake stand for 10-15 minutes in pan before turning out onto a cooling rack
- when cake is completely cooled, dust with powdered sugar..
- eat just like this or serve with your favorite topping: fruit, sauce, ice cream

Although it will be hard to get some of the ingredients but I am sure it is delicious Peeta.
