Lime Cucumber Salsa Recipe
A chunky salsa made out of fresh vegetables and herbs. Can be be without salt and oil for a no-sodium, no-fat salsa. I found this recipe several months ago in one of my many cookbooks an wrote it down with plans to try it out when I get a chance.

Ingredients
  • 1 Lg Cucumber, seeded & finely chopped
  • 1-2 Garlic Cloves, minced
  • 1 Jalepno Pepper, finely chopped
  • 3 Green Onions, sliced
  • 2 T Minced Fresh Cilantro
  • 2 T Lime Juice
  • 2 T Olive Oil or Vegetable Oil, optional
  • 1 t. Grated Lime Pee;
  • 1/2 t. Salt, optional
  • 1/4 t. Black Pepper

Directions
  1. In a bowl, combine all ingredients. Refrigerate for at least 2 hours before serving. Makes 2 1/2 cups.
  2. 3T Serving without salt = 25 calories, 1 mg sodium o cholesterol, 1 gm carbohydrates, 2 gm protein, 2 gm fat
  3. Diabetic Exchange: 1/2 fat...Unless you leave out the oil!
