How to make it

  • Filling:
  • Wash scallops well. Soak in milk for 2 hours or so. Simmer in wine about 5 minutes. Drain and reserve liquid. Melt butter and saute onions, mushrooms and parsley. Stir in flour until blended. Add reserved liquid and heavy cream. Add scallops to hot sauce. Place in shallow casserole and heat in oven before filling crepes.
  • Crepes:
  • Put all ingredients in a blender. Blend 2 minutes. Refrigerate 2 hours. Make crepes in a non-stick 8" skillet as thin as possible. Fill with scallop filling just before serving.
