Scallops and Mushrooms in Wine Cream Sauce in Crepes

- Filling: shopping list
- 2 lbs. scallops shopping list
- 2 c. dry white wine shopping list
- 1/4 c. butter shopping list
- 4 chopped green onions shopping list
- 24 finely sliced mushrooms shopping list
- 2 tbsp. minced parsley shopping list
- 2 tbsp. flour shopping list
- 4 tbsp. heavy cream shopping list
- Crepes: shopping list
- 1 c. cold water shopping list
- 1 c. cold milk shopping list
- 4 eggs shopping list
- 1/2 tsp. salt shopping list
- 2 c. flour shopping list
- 2 tbsp. melted butter shopping list
How to make it
- Filling:
- Wash scallops well. Soak in milk for 2 hours or so. Simmer in wine about 5 minutes. Drain and reserve liquid. Melt butter and saute onions, mushrooms and parsley. Stir in flour until blended. Add reserved liquid and heavy cream. Add scallops to hot sauce. Place in shallow casserole and heat in oven before filling crepes.
- Crepes:
- Put all ingredients in a blender. Blend 2 minutes. Refrigerate 2 hours. Make crepes in a non-stick 8" skillet as thin as possible. Fill with scallop filling just before serving.
