Eggs In Buttercups Recipe
EGGS IN BUTTERCUPS This recipe came from an estate sale. I obtained it when I purchased the family collection from the O'Reilly Estate in Fort Worth, Texas in 1988.

Ingredients
  • 12 slices fresh bread
  • Butter
  • 8 eggs
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/4 cup heavy cream
  • Fried bits of bacon

Directions
  1. Trim crusts form bread then press slices into muffin pan cups brushing with butter.
  2. Bake in 400 oven for 20 minutes.
  3. Beat eggs until fluffy then add salt, pepper, cream and bacon then pour in greased skillet. Cook over low heat until set lifting occasionally with spatula.
  4. Spoon onto toast cups then serve immediately garnished with additional bacon.
