How to make it

  • In a blender: cup of basil, pine nuts, strip of red pepper,honey,capers, ground pepper, splash of vinegar, dijon mustard, olive oil to a sauce not a paste.
  • marinate chicken in sauce, reserving a little for drizzling.
  • in a bowl: red onion, tomatoes, red pepper, feta, olives, capers, splash of vinegar, and olive oil. let this sit while chicken marinates.
  • grill chicken 4 or 5 minutes per side.
  • let rest for 5 min.
  • spoon over salad mix and drizzle with remaining basil sauce and enjoy!
