Olive Pasta Salad Recipe
When it's just too hot to use the oven, making a big bowl of pasta salad to east during the week is the perfect solution!

Ingredients
  • 1 1/2 Cups elbow macaroni or pasta of your choice
  • Jar of Olives (I used Guiliano brand olives)
  • 2 cloves of garlic
  • Parmesan cheese (grated, fresh is best)
  • 3 tablespoons Balsamic Vinaigrette (I used Newman's Own)
  • 1 dash Italian seasoning
  • 1/2 Cup peas or cooked soy beans
  • salt and pepper

Directions
  1. Boil your pasta and drain, add to a large bowl.
  2. Dice up a handful of olives or as many as you'd think you like.
  3. Mince garlic
  4. Mix in all ingredients, don't forget to add a splash of olive juice from the jar or tub for an extra kick of flavor!
  5. Refrigerate and enjoy for a nice snack when it's too hot!

I'm still trying to find a pasta salad my husband really likes -- this sure sounds good to ME so I'll try it and see if he asks for seconds! Thanks for posting.


I know what you mean, my fiance hates mayo, and ranch dressing which most pasta salads are full of. :)


Some fresh basil from my garden is all I would add to this scrumptious recipe.
