Ingredients
  • 8 lb Brisket
  • Salt/Pepper
  • Garlic Powder
  • Onion Powder
  • Paprika
  • Cumin
  • Cayenne Pepper
  • Hickory or Mesquite wood chips (soaked in water for at least 30 min)

Directions
  1. No need to trim Brisket at all
  2. Rub down Brisket good with a generous amount of Salt and Pepper
  3. Combine; 1 tbls. Paprika, 2 tbls. Garlic powder, 2 tbls. Onion Powder, 1 teas. Cumin, 1/2 teasp. Cayenne pepper , these are approx. amounts, I just sprinkle some of each on and rub it in good.( using a premixed rub is fine as well if you have a favorite, mine changes as to what I have on hand)
  4. Set up your smoker according to manuf. directions,
  5. In the water pan I add Liquid smoke and alittle Soy sauce to a pitcher of water and add to the water pan as needed thru-out the cooking.
  6. Place Brisket in smoker on a doubled piece of foil, I start my Brisket fat side up and turn it over after about 3 hours
  7. Smoke for approx. 8 hours keeping it at 220-250 adding wood chips as needed every hour or so.
  8. Remove from smoker wrap in foil and let sit awhile before slicing( and remember to slice across the grain)
  9. Serve with your favorite BBQ sauce

You came through with this terrific brisket recipe just in time for the 4th! Think I'll add your smoked baked beans, some bbq coleslaw - maybe blueberry cobbler for dessert. I feel a plan coming on!


This sounds great.Have you ever tried apple or cherry wood? Both give a bit of a sweet smokey flavor.
