Watermelon Muffins

- 1-1/2 cups flour shopping list
- 2 teaspoons baking soda shopping list
- 1 teaspoon baking powder shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon cinnamon shopping list
- 6 tablespoons butter at room temperature shopping list
- 2/3 cup granulated sugar shopping list
- 2 eggs shopping list
- 1/2 cup milk shopping list
- 1/2 cup watermelon juice shopping list
- 1/2 cup watermelon pulp shopping list
- 1/2 cup raisins shopping list
How to make it
- Sift flour, baking powder, baking soda, salt and cinnamon in large bowl.
- Cream butter and sugar then add eggs and whip in milk, juice, pulp and raisins.
- Add wet mixture to dry ingredients then blend just to incorporate.
- Fill greased muffin cups 2/3 full then bake 25 minutes and transfer to wire rack to cool.
