Lazy Chipotle Sauce Recipe

Ingredients
  • 1 12 Oz can of Chipotles in adobo
  • 1 12 Oz can of chopped tomatoes
  • 1/2 a small onion (your choice)
  • 3 tablespoons Garlic powder
  • 3 tablespoons Oregano
  • 3 Bay leaves
  • 1 tablespoon Cumin
  • 1 tablespoon Sumac
  • 1 tablespoon Thyme
  • 1 plastic thingy of lime juice

Directions
  1. Chop up the onion and saute in olive oil until tender
  2. Put the sauted onions and all other ingredients, except bay leaves, into food process and blend
  3. Empty everything out into the top of a double boiler
  4. Add bay leaves and cook over boiling water for on hour covered
  5. Cool, put into fridge overnight
  6. The next day run it all through your puree pot.
  7. Put into squeeze bottle. Keeps for weeks in refrigerator.

Sounds really delicious. I just tried my hand at making chipotles in adobo at home and they turned out great. I have also really gotten into sumac as of late - it's so good. Great post - thanks! :) Vickie

Alterations


Fresh roma tomatoes,
Whole garlic chopped,
Fresh oregano (you can even throw stems in they will come out in the puree pot,
Fresh tyme.
Cilantro
Sqeezed fresh limes.
It will be better but not all that much better.
