Jump Up- Caribbean Style - Meat Rub And Marinade

- 1 - large yellow onion chopped shopping list
- 7 - cloves of garlic shopping list
- 2 - large scallions , chopped shopping list
- 1 - sprig of fresh thyme ( or 1 tsp dried) shopping list
- 1 - teaspoon ground allspice shopping list
- 1/4 - cup gold rum shopping list
- 2- tablespoons soy sauce shopping list
- 1 - teaspoon .....hell-fire - hot pepper sauce .......(or any hot pepper sauce ) shopping list
- 2 - tablespoons fresh lime juice .or .......( cider vinegar) shopping list
- 1 - tableppon coarse or kosher salt shopping list
- 1 - tablespoon ground black pepper shopping list
How to make it
- Combine all ingredients in a food processor or blender and process into a paste.
- for beef;.....or pork.......make shallow cuts over the meat surface.
- use your fingertips to rub the marinade into the meat give it a massage yeah baby .................thats it .......pushing small amts into the cuts..nice all done .
- for poultry;..................lift small sections of skin and rub marinade over the meat, then replace skin, using fingertips, rub the rest of the skin thoroughly.
- refigerate rubbed meat for 12 hours or longer, covered or in a sealed zip lock bag.
- if you are browning the meat to braise or stew, carefully scrape off and reserve the marinade and add it into the cooking liquid later.this isnt necessary if youre roasting or grilling the meat...........enjoy .........
