How to make it

  • You can use a separate skillet and cooking pot with a lid - or do everything in a pot that's big enough to hold everything. I believe in the conservation of (dirty) dishes.
  • Mix the flour and spices in a bag or large container with a lid.
  • Add the chicken pieces and shake to coat. Save the flour mixture.
  • Heat the oil over medium high heat in a large skillet (or your cooking pot).
  • Brown the chicken and remove it to a platter or container.
  • Sauté the onion and garlic in the drippings until tender and golden.
  • Stir in the reserved flour mixture and brown that.
  • Add the liquids and the broken spaghetti and mix to combine
  • Place the chicken on top of the spaghetti and bring to a boil.
  • Reduce the heat, cover and simmer for 20 minutes, until the chicken and spaghetti are tender.
  • Garnish with chopped parsley.
  • **The dish reheats well.
