One Pot Lemony Chicken Spaghetti Curry Recipe

Ingredients
  • A whole chicken, cut up - or 4 quarters, cut up (more if you need it.)
  • 3 Tbsp flour
  • 2 Tbsp curry powder OR -- combine your own
  • -- 1 Tbsp cumin
  • -- 1 tsp turmeric
  • -- 1 tsp ground coriander seed
  • -- 1/2 tsp ground chili pepper (reduce or omit to control the heat)
  • -- 1 tsp paprika
  • --
  • 2 1/2 tsp salt
  • 1/4 tsp pepper
  • up to 1/3 cup oil for browning the chicken
  • 1-2 large onions, sliced
  • 1 clove garlic, sliced (Oh come on! I use a *head* of garlic, at least!)
  • 4-5 cups of liquid. Any combination of one or more of the following:
  • ~~ Juice of 1-2 lemons
  • ~~ 1-2 cup of orange juice
  • ~~ Water
  • ~~ Broth
  • 500 grams spaghetti (about 1 lb), broken (The original recipe calls for 8 oz of spaghetti, but I like more, especially if I'm cooking 6 chicken quarters)
  • Fresh parsley, to garnish
  • * If you need to coat more than a chicken, increase the flour and spices.
  • * If you use 8 oz of spaghetti, use only 2 1/2 cups of liquid
  • * You can also add 2-4 cubed zucchini at the same time you brown the onions and garlic

Directions
  1. You can use a separate skillet and cooking pot with a lid - or do everything in a pot that's big enough to hold everything. I believe in the conservation of (dirty) dishes.
  2. Mix the flour and spices in a bag or large container with a lid.
  3. Add the chicken pieces and shake to coat. Save the flour mixture.
  4. Heat the oil over medium high heat in a large skillet (or your cooking pot).
  5. Brown the chicken and remove it to a platter or container.
  6. Sauté the onion and garlic in the drippings until tender and golden.
  7. Stir in the reserved flour mixture and brown that.
  8. Add the liquids and the broken spaghetti and mix to combine
  9. Place the chicken on top of the spaghetti and bring to a boil.
  10. Reduce the heat, cover and simmer for 20 minutes, until the chicken and spaghetti are tender.
  11. Garnish with chopped parsley.
  12. **The dish reheats well.
