One Pot Lemony Chicken Spaghetti Curry

- A whole chicken, cut up - or 4 quarters, cut up (more if you need it.) shopping list
- 3 Tbsp flour shopping list
- 2 Tbsp curry powder OR -- combine your own shopping list
- -- 1 Tbsp cumin shopping list
- -- 1 tsp turmeric shopping list
- -- 1 tsp ground coriander seed shopping list
- -- 1/2 tsp ground chili pepper (reduce or omit to control the heat) shopping list
- -- 1 tsp paprika shopping list
- -- shopping list
- 2 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- up to 1/3 cup oil for browning the chicken shopping list
- 1-2 large onions, sliced shopping list
- 1 clove garlic, sliced (Oh come on! I use a *head* of garlic, at least!) shopping list
- 4-5 cups of liquid. Any combination of one or more of the following: shopping list
- ~~ juice of 1-2 lemons shopping list
- ~~ 1-2 cup of orange juice shopping list
- ~~ water shopping list
- ~~ broth shopping list
- 500 grams spaghetti (about 1 lb), broken (The original recipe calls for 8 oz of spaghetti, but I like more, especially if I'm cooking 6 chicken quarters) shopping list
- fresh parsley, to garnish shopping list
- * If you need to coat more than a chicken, increase the flour and spices. shopping list
- * If you use 8 oz of spaghetti, use only 2 1/2 cups of liquid shopping list
- * You can also add 2-4 cubed zucchini at the same time you brown the onions and garlic shopping list
How to make it
- You can use a separate skillet and cooking pot with a lid - or do everything in a pot that's big enough to hold everything. I believe in the conservation of (dirty) dishes.
- Mix the flour and spices in a bag or large container with a lid.
- Add the chicken pieces and shake to coat. Save the flour mixture.
- Heat the oil over medium high heat in a large skillet (or your cooking pot).
- Brown the chicken and remove it to a platter or container.
- Sauté the onion and garlic in the drippings until tender and golden.
- Stir in the reserved flour mixture and brown that.
- Add the liquids and the broken spaghetti and mix to combine
- Place the chicken on top of the spaghetti and bring to a boil.
- Reduce the heat, cover and simmer for 20 minutes, until the chicken and spaghetti are tender.
- Garnish with chopped parsley.
- **The dish reheats well.
