Ingredients
  • 1 small onion, diced
  • 2/3 cup (dry) orzo pasta
  • 5 1/2 oz (2 cups) cremini mushrooms, diced
  • 20 stalks asparagus, chopped into 1" lengths
  • 1 bay leaf
  • 2 tsp chopped rosemary
  • 1 clove garlic, minced
  • 2 oz dried porcini mushrooms, soaked in 2/3 cup hot water, drained and chopped (reserve liquid)
  • 1 cup water
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions
  1. Heat 1/4 cup water in a wide pot or sauté pan on medium high heat.
  2. Add onions, stir and cook until translucent, with slight browning on edges - about 5 minutes.
  3. Add orzo to the pan, stirring to prevent burning.
  4. Add cremini mushrooms, asparagus, bay leaf, rosemary and garlic.
  5. Cook until mushrooms have browned well, about 5 minutes.
  6. Add in porcinis, their liquid, and remaining water.
  7. Bring to a boil, then reduce to a simmer and cooked, covered for 10 minutes.
  8. Stir in salt and pepper to taste, remove bay leaf and serve.
