Spring Mushroom Orzo

- 1 small onion, diced shopping list
- 2/3 cup (dry) orzo pasta shopping list
- 5 1/2 oz (2 cups) cremini mushrooms, diced shopping list
- 20 stalks asparagus, chopped into 1" lengths shopping list
- 1 bay leaf shopping list
- 2 tsp chopped rosemary shopping list
- 1 clove garlic, minced shopping list
- 2 oz dried porcini mushrooms, soaked in 2/3 cup hot water, drained and chopped (reserve liquid) shopping list
- 1 cup water shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
How to make it
- Heat 1/4 cup water in a wide pot or sauté pan on medium high heat.
- Add onions, stir and cook until translucent, with slight browning on edges - about 5 minutes.
- Add orzo to the pan, stirring to prevent burning.
- Add cremini mushrooms, asparagus, bay leaf, rosemary and garlic.
- Cook until mushrooms have browned well, about 5 minutes.
- Add in porcinis, their liquid, and remaining water.
- Bring to a boil, then reduce to a simmer and cooked, covered for 10 minutes.
- Stir in salt and pepper to taste, remove bay leaf and serve.
