Ingredients

How to make it

  • Heat 1/4 cup water in a wide pot or sauté pan on medium high heat.
  • Add onions, stir and cook until translucent, with slight browning on edges - about 5 minutes.
  • Add orzo to the pan, stirring to prevent burning.
  • Add cremini mushrooms, asparagus, bay leaf, rosemary and garlic.
  • Cook until mushrooms have browned well, about 5 minutes.
  • Add in porcinis, their liquid, and remaining water.
  • Bring to a boil, then reduce to a simmer and cooked, covered for 10 minutes.
  • Stir in salt and pepper to taste, remove bay leaf and serve.
