Cheatin Chicken Pot Pie

- 1 lb. chicken breasts ( boneless and skinless ) shopping list
- I 15 oz. can of mixed vegetables shopping list
- 2 frozen pie crusts( hence the CHEATING ) shopping list
- 1 packet chicken gravy mix ( like McCormicks ) shopping list
- 2 tbls. vegetable oil shopping list
How to make it
- Pre heat the oven to 375 degrees
- I usually cook the bottom crust for about 10 min.
- Cut your chicken breasts into half inch cubes and cook in skillet with your vegetable oil. DRAIN !
- Add your mixed vegetables to the chicken .
- Mix gravy per instructions. Don't cook the gravy !!
- Add all of your ingredients to your partially cooked pie crust.
- Use your second pie crust as the topper - MAKE SURE YOU PUT VENT HOLES IN THE TOP CRUST !!!!
- Bake on 375 for 20-30 depending on your oven. Check often
- You will know this is done when the crust is brown and the inside is "bubbly".
- This is good and simple, one of the FEW things I cook that has no left overs.
- Being a beginner I always enjoy seeing empty plates . The first time I ate this was on my birthday, my fiance cooked this for me and I was like WOW ! I suppose it was meant for me when he said real sweet, "Hey Nette EVEN YOU can make THIS". Hmmm - was that a compliment ?

Now, I would just call this chicken pie as in my area pot pie is more like your chicken and rolled dumplings, but it looks fabulously easy! I make beef pie in a similar manner - either using leftover stew or a can of Dinty Moore (or whatever brand)....more
