Cold Sesame Rice Noodles

- 1 lb. rice noodles - whichever type is your favorite - prepared according to package directions shopping list
- 2 T. vegetable oil shopping list
- 1/3 c. sesame seeds shopping list
- 6 T. soy sauce or wheat-free tamari to make it gluten-free shopping list
- 6 T. tahini (sesame seed paste) shopping list
- 1/4 c. sugar shopping list
- 3 T. white vinegar shopping list
- 3 T. dry white wine shopping list
- 1 1/2 t. garlic, miniced shopping list
- 1/2 t. ginger shopping list
- red pepper flakes shopping list
- shredded lettuce shopping list
- sliced green onions shopping list
How to make it
- Transfer cooked noodles to large bowl and toss well with oil. Cover and refrigerate until chilled.
- Toast sesame seeds in heavy small skillet until light brown stirring constantly. Tranfer to food processor container with next 9 ingredients and process until smooth. Mix well with noodles and refrigerate.
- At serving time, put lettuce on large serving platter, mound noodles in center and top with green onions.
- Optional: Add some shredded cooked chicken breast, shredded carrots, finely slivered sweet red pepper or whatever tickles your fancy.
- NOTE: If you're not crazy about rice noodles, use spaghetti.
