How to make it

  • Rub the roast well with olive oil or spray all over with olive oil spray. Liberally sprinkle granulated garlic over all sides of the meat, then repeat with the pepper. Spray with olive oil again and press a generous amount of Herbes de Provence (coat it!) into all sides of the meat. Place into a roast rack for the grill and set aside.
  • Prepare grill for indirect heat at low temperatire. Place an aluminum drip pan under the grate where you will place the roast. Put the roast in the rack over the drip pan on the grill and roast until a meat thermometer registers just how you like it - I like it medium rare.
  • Let the roast rest about 20 minutes, carve at the table and watch the happiness wash over your guests faces as they take their first bite. And don't throw out the bones....they're the best part to snack on while you're cleaning up.
