Spanish Roast Recipe
This is a recipe I obtained from the Danner Estate in Dallas, Texas in 1984. Tried and true and extremely good and tender. Enjoy

Ingredients
  • 4 pound roast
  • Flour
  • 2 tablespoons vegetable oil
  • 1 large white onion sliced thin into rings
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 whole cloves
  • 1 tablespoon vinegar
  • 1 whole bay leaf
  • 1 teaspoon cinnamon
  • 2 tablespoons catsup
  • 2 cups water
  • 2 ounces semisweet baking chocolate grated

Directions
  1. Flour roast then brown on all sides in oil the remove from past and set aside.
  2. Put onion rings into pot then add salt and pepper.
  3. Put roast on top of onion rings then add cloves, vinegar, bay leaf, cinnamon, catsup and water.
  4. Put lid on pot then allow to come to a boil and simmer 2-1/2 hours.
  5. Add grated chocolate and stir around roast then allow to cook 15 minutes longer.
  6. Remove cloves and bay leaf.
