Ingredients
  • ¾ cup unsalted butter
  • 2 eggs
  • 1 ½ cup brown sugar
  • 2 cups all-purpose flour
  • 2 cups dry oats
  • 1 tbsp ground ginger
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • ½ tsp salt

Directions
  1. Preheat oven to 350˚F.
  2. In a medium bowl, cream butter and sugar until well blended.
  3. Add eggs and mix until smooth.
  4. In a separate bowl, combine flour, oats, ginger, cinnamon, baking soda, and salt. Then gradually mix dry ingredients into wet mixture.
  5. Drop, or roll into balls, dough onto greased baking sheet in 2 (more or less) tbsp amounts, and bake on center rack for 8-10 minutes.
  6. Transfer onto wire rack to cool.
