How to make it

  • Preheat oven to 350˚F.
  • In a medium bowl, cream butter and sugar until well blended.
  • Add eggs and mix until smooth.
  • In a separate bowl, combine flour, oats, ginger, cinnamon, baking soda, and salt. Then gradually mix dry ingredients into wet mixture.
  • Drop, or roll into balls, dough onto greased baking sheet in 2 (more or less) tbsp amounts, and bake on center rack for 8-10 minutes.
  • Transfer onto wire rack to cool.

    These came out great! Not overly sweet which I really like, and the recipe was spot on to make 36 tablespoon-sized cookie dough balls. Had to bake them about 13 minutes for the bottoms to brown. Also put small pieces of crystallized ginger in the dough balls before baking - gave them a nice spicy and sweet kick. Will make again.
