Mums Old Fashioned Lemon Meringue Pie Recipe
My mom's recipe - no lemon pudding here! Makes me think of the 50's and the street I grew up on. As with all pies in my collection, if you use a 10" pie plate, halve again the ingredients to fill the plate nicely.

Ingredients
  • 1 pie crust (9 inch), baked
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup flour
  • 3 tablespoons cornstarch
  • 2 cups water
  • 3 egg yolks
  • 3 egg whites
  • 1 tablespoon butter
  • 1/4 cup fresh lemon juice
  • 6 tablespoons sugar

Directions
  1. Combine 1st four ingredients in saucepan. Stir in water. Cook over medium heat unti lthick and clear. Add a little of the hot mixture to beaten egg yolks and return to hot mixture. Cook 1 minute more stirring constantly. Take from heat and beat in butter and juice. Pour into shell and cool slightly. Top with meringue & brown in 425 oven for 5 minutes.
  2. Meringue: Beat egg whites until fluffy and gradually add 6 T. sugar. Continue to beat until stiff.
