Choconut Coke Cake

- frosting : shopping list
- toast 1 C sweetened flaked coconut and 1 C chopped nuts separately until lightly golden and fragrant . Let it cool . shopping list
- caramel 2 cans of condensed milk and cool . Whisk . shopping list
- Mix the toasted ing. and refrigerate covered until cool ( Do not let it set ) . shopping list

- 2 3/4 C flour , 1/2 C cocoa pwd , 1 1/4 tsp baking soda , 1 1/2 tsp cinnamon pwd - sifted shopping list
- 2 3/4 C Cherry or vanilla flavoured Coke shopping list

- 1 1/2 oz baking chocolate , chopped shopping list
- 2 / 3 C buttermilk shopping list
- 3 eggs , lightly whisked shopping list
- 1 3/4 C olive oil shopping list
- 1 1/2 tsp vanilla essence shopping list
- 2 C sugar shopping list

How to make it
- Preheat oven at 180 deg
- Simmer the chocolate and buttermilk in a double boiler until the chocolate melts .
- Make sure not to curdle the buttermilk .
- Beat the oil and essence into the eggs .
- Whisk the sugar in until it mixes well .
- Stir the chocolate in .
- Fold in the dry ing. and coke alternatively .
- Pour the batter into 3 greased and lined 9 inch pans .
- Bake for 25 to 30 mins .
- Leave in the pan for few mins and turn it on wire rack .
- Cool completely .

- Assemble :
- Place one layer on a seving plate .
- Spread the frosting on top .
- Repeat with the other 2 layers .
- and cover the top and sides .
- Chill until the cake sets .
