Giorgio's classic Italian Ragu, This is the real thing, simple, delicious!

Ingredients
  • 3 Tbsp Olive Oil
  • 1/2 C white onion - fine chop
  • 1/2 C carrot - fine chop
  • 3 cloves garlic minced
  • 1.5 lb ground sirloin
  • 3/4 C dry red wine
  • 1 beef boullion cube
  • 2 bay leaf
  • 6 oz Contadina tomato paste
  • 12 oz beef broth + 1/2 can water
  • xx red pepper flakes to taste

Directions
  1. saute onion & garlic in olive oil until soft.
  2. add celery and carrot. saute additional 2 min until soft.
  3. add meat. cook until brown.
  4. add boullion + wine. reduce for 3 min.
  5. add tomato paste. incorporate.
  6. add broth. bring to a full boil.
  7. add bay leaf.
  8. add red pepper flakes (from 1/2 Tsp to 1 Tbsp)
  9. simmer 1-2 hours. begin checking after 1 hr.
  10. freezes great, serve over penne or your favorite pasta.
