Ingredients

2 lbs. Live LIittleneck Clams (scrubbed)

2-3 cans of minced clams (or 1/2 pound of freshly minced clams)

1 medium onion – Chopped

6 cloves, minced

1/2 tsp. dried red pepper flakes (or more if you like it spicy!)

¼ cup olive oil

½ cup white wine

1 large can (28 oz) tomato puree (or crushed – your choice)

¼ cup freshly chopped parsley

Salt and black pepper to taste

Directions

Saute onion in olive oil until almost transparent. . Add minced garlic and red pepper flakes, saute until garlic just starts to turn light golden brown. Add white wine, parsley and juice from the canned clams, simmer for about 5 minutes. Add tomato puree and simmer for 20 minutes. Add fresh littleneck clams and cover. Simmer until clams open (about 5 minutes). Discard any clams that do not open.

Serve over hot cooked pasta.
