Mamalous Quick and Easy Red Clam Sauce

- 2 lbs. Live LIittleneck clams (scrubbed) shopping list
- 2-3 cans of minced clams (or 1/2 pound of freshly minced clams) shopping list
- 1 medium onion – Chopped shopping list
- 6 cloves, minced shopping list
- 1/2 tsp. dried red pepper flakes (or more if you like it spicy!) shopping list
- ¼ cup olive oil shopping list
- ½ cup white wine shopping list
- 1 large can (28 oz) tomato puree (or crushed – your choice) shopping list
- ¼ cup freshly chopped parsley shopping list
- salt and black pepper to taste shopping list
How to make it
- Saute onion in olive oil until almost transparent. . Add minced garlic and red pepper flakes, saute until garlic just starts to turn light golden brown. Add white wine, parsley and juice from the canned clams, simmer for about 5 minutes. Add tomato puree and simmer for 20 minutes. Add fresh littleneck clams and cover. Simmer until clams open (about 5 minutes). Discard any clams that do not open.
- Serve over hot cooked pasta.
- ENJOY!
