Mamalous Quick And Easy Red Clam Sauce Recipe

Ingredients
  • 2 lbs. Live LIittleneck Clams (scrubbed)
  • 2-3 cans of minced clams (or 1/2 pound of freshly minced clams)
  • 1 medium onion – Chopped
  • 6 cloves, minced
  • 1/2 tsp. dried red pepper flakes (or more if you like it spicy!)
  • ¼ cup olive oil
  • ½ cup white wine
  • 1 large can (28 oz) tomato puree (or crushed – your choice)
  • ¼ cup freshly chopped parsley
  • Salt and black pepper to taste

Directions
  1. Saute onion in olive oil until almost transparent. . Add minced garlic and red pepper flakes, saute until garlic just starts to turn light golden brown. Add white wine, parsley and juice from the canned clams, simmer for about 5 minutes. Add tomato puree and simmer for 20 minutes. Add fresh littleneck clams and cover. Simmer until clams open (about 5 minutes). Discard any clams that do not open.
  2. Serve over hot cooked pasta.
  3. ENJOY!
