Sri Lankan Toronto Noodles Recipe
Adapted from Fresh restaurant in Toronto, whose Sri Lankan cook taught the owner this recipe and had it become immensely popular with the staff and public!

Ingredients
  • 1/3 cup water
  • 1 large zucchini, diced
  • 1 large red pepper, diced
  • 1 cup broccoli florets
  • 1 large tomato, chopped
  • 1 cup sliced mushrooms
  • 4 cloves garlic, minced
  • 1/2 red onion, minced
  • 4 tbsp tamari
  • 2 tbsp curry powder
  • 2 tsp chili-garlic sauce
  • 1 cup water
  • 4 cups cooked whole-wheat fettuccine (8 oz dry)
  • 2 cups bean sprouts

Directions
  1. Heat water in a large, deep skillet.
  2. Add all ingredients through tamari. Cook 6 - 8 minutes, stirring often.
  3. Add curry powder and chili-garlic sauce.
  4. Cook, stirring, 30 seconds.
  5. Add water, noodles and bean sprouts.
  6. Cook 3 - 4 minutes, until most of the liquid is evaporated.
