Cornfetti Salad

- 4 ears of fresh corn, de-silked, steamed, cut off the cob shopping list
- or 1 can of shoe peg corn, drained shopping list
- 1 can of cooked black beans, rinsed and drained shopping list
- 1 or two pickled jalapenos diced shopping list
- 1/2 of red bell pepper, diced shopping list
- 3 green onions, diced shopping list
- 1 tablespoon of cilantro leaves, chopped shopping list
- 2 tablespoon of vegetable oil shopping list
- 3 tablespoons of lime juice shopping list
- 1/2 tsp of cumin shopping list
- 1/4 tsp of adobo seasoning shopping list
- fresh ground black pepper, generous amounts shopping list
How to make it
- Clean fresh corn, place in steamer, steam until cooked.
- Cool and cut off cobs.
- combine with black beans and chopped vegetables.
- Whisk oil, lime and seasonings.
- Pour over prepped veggies.
- cover and refrigerate.
- Improves if flavors blend for a few hours before serving.

Oh how I remember hours of removing corn from MANY cobs while growing up. We had a huge garden and my mother froze much corn! (We canned everything else but corn, cauli., and broccoli!)
...But how good to have fresh corn for this recipe!...moredynie in Marietta loved it
