Maggity Anne Muffins

- 2 cups flour shopping list
- 1/3 cup sugar shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 1/4 cup orange juice, freshly squeezed shopping list
- Zest of 1 orange shopping list
- 2 Tbs corn oil (or Canola or Safflower) shopping list
- 1 tsp vanilla shopping list
- 1 cup Plain, Low Fat yogurt shopping list
- 1 egg shopping list
- 1 cup fresh blueberries shopping list
- 2 Tbs sugar (to sprinkle on top before baking) shopping list
How to make it
- Preheat oven to 400°F.
- Prepare muffin tins. (I prefer using paper baking cups.)
- In large bowl, combine dry ingredients (flour, sugar, baking powder, baking soda and salt).
- In small bowl, combine wet ingredients (orange juice, zest, oil, vanilla, yogurt and egg) and whisk together until well blended.
- Create a 'well' in the centre of the dry ingredients.
- Add wet ingredients to dry ingredients (pour wet ingredients into the well); stir with a fork just until mixtures are combined. Do not over-stir.
- Gently fold in blueberries.
- Spoon batter into 12 muffin cups.
- Sprinkle each muffin with a wee bit of sugar.
- Bake at 400°F for 18 minutes or until the muffins spring back when lightly touched. Remove muffins from pans immediately, and place on a wire rack to cool.
