How to make it

  • Preheat oven to 400°F.
  • Prepare muffin tins. (I prefer using paper baking cups.)
  • In large bowl, combine dry ingredients (flour, sugar, baking powder, baking soda and salt).
  • In small bowl, combine wet ingredients (orange juice, zest, oil, vanilla, yogurt and egg) and whisk together until well blended.
  • Create a 'well' in the centre of the dry ingredients.
  • Add wet ingredients to dry ingredients (pour wet ingredients into the well); stir with a fork just until mixtures are combined. Do not over-stir.
  • Gently fold in blueberries.
  • Spoon batter into 12 muffin cups.
  • Sprinkle each muffin with a wee bit of sugar.
  • Bake at 400°F for 18 minutes or until the muffins spring back when lightly touched. Remove muffins from pans immediately, and place on a wire rack to cool.
