Spinach Mushroom Stuffed Chicken Breasts

- 4 boneless skinless chicken breasts shopping list
- 1 pkg. frozen chopped spinach shopping list
- 2 tbls butter shopping list
- 12 small mushroom caps shopping list
- garlic shopping list
- 1 small onion, chopped shopping list
- salt & pepper to taste shopping list
- 1 cp ricotta shopping list
- 1/2 cp Parmesan cheese shopping list
- toothpicks shopping list
- 2 tbls olive oil shopping list
- Sauce: shopping list
- 2 tbls butter shopping list
- 2 tbls flour shopping list
- 1 1/2 cp chicken broth shopping list
How to make it
- Defrost spinach and drain well.
- In a med hot skillet add butter, mushrooms, garlic and onion.
- Add salt and pepper and saute 5 mins.
- Add mixture to spinach then add cheeses. Mix well.
- Place a mound of stuffing on each breast and wrap and roll.
- Secure with toothpicks.
- Add 3 tbls oil to the pan then add breasts and brown 10-12 mins.
- Remove from heat.
- Add butter and flour in pan and cook for one minute then whisk in broth.
- Remove toothpicks from chicken and spoon sauce over them and serve.
