Spinach  Mushroom Stuffed Chicken Breasts Recipe
This one is an instant hit the first time you cook it and before you know it you'll be making it all the time. I love spinach and mushrooms, they go very nice together.

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 pkg. frozen chopped spinach
  • 2 tbls butter
  • 12 small mushroom caps
  • garlic
  • 1 small onion, chopped
  • salt & pepper to taste
  • 1 cp ricotta
  • 1/2 cp Parmesan cheese
  • toothpicks
  • 2 tbls olive oil
  • Sauce:
  • 2 tbls butter
  • 2 tbls flour
  • 1 1/2 cp chicken broth

Directions
  1. Defrost spinach and drain well.
  2. In a med hot skillet add butter, mushrooms, garlic and onion.
  3. Add salt and pepper and saute 5 mins.
  4. Add mixture to spinach then add cheeses. Mix well.
  5. Place a mound of stuffing on each breast and wrap and roll.
  6. Secure with toothpicks.
  7. Add 3 tbls oil to the pan then add breasts and brown 10-12 mins.
  8. Remove from heat.
  9. Add butter and flour in pan and cook for one minute then whisk in broth.
  10. Remove toothpicks from chicken and spoon sauce over them and serve.

This sounds very good and simple too. I take it you pound the chicken breasts flat first. Do you roll up lengthwise or starting from narrow end of breast?


Yes you do pound the chicken and I put the stuffing on top of the widest side of the chicken then roll up. =]
