How to make it

  • Defrost spinach and drain well.
  • In a med hot skillet add butter, mushrooms, garlic and onion.
  • Add salt and pepper and saute 5 mins.
  • Add mixture to spinach then add cheeses. Mix well.
  • Place a mound of stuffing on each breast and wrap and roll.
  • Secure with toothpicks.
  • Add 3 tbls oil to the pan then add breasts and brown 10-12 mins.
  • Remove from heat.
  • Add butter and flour in pan and cook for one minute then whisk in broth.
  • Remove toothpicks from chicken and spoon sauce over them and serve.

    Yes you do pound the chicken and I put the stuffing on top of the widest side of the chicken then roll up. =]

    This sounds very good and simple too. I take it you pound the chicken breasts flat first. Do you roll up lengthwise or starting from narrow end of breast?
