How to make it

  • Mix butter, sugar and oil until blended. Add eggs, vanilla, milk and sour cream; beat well with mixer.
  • Combine dry ingredients and add to egg mixture, beating well. Stir in shredded zucchini. Turn into greased, floured,
  • 9 x 13 inch pan and sprinkle with chocolate chips.
  • Bake at 350 degrees for 40 - 45 minutes or until cake tests done.

    This is an excellent recipe!! I grew two zucchini plants this year and have had over 20 zucchini's so far and they are still coming. Everyone loves this cake, I have made it a few times this summer already. Also, it freezes well and makes nice cupcakes (no icing needed).

    There is no sugar listed in your ingredients, and 1 3/4 cup oil listed. This seems like alot of oil to me. Is it suppose to be 1 cup sugar and 3/4 cup oil? This is the change I made. It is in the oven now. I will let you know how it turns out.

    I knew a lady years ago who used to make a chocolate zucchini cake. I used to make it with her but was too young to pay attention to the ingredients. I never got her recipe and she is gone now. I am going to try this one as soon as the zucs are ready.
