Italian White Beans And Sausage Recipe
I love this dish.... its so good...You have to try it... This is not your basic American tasting dish.. Its definately Italian.

Ingredients
  • 1 12oz package smoked low fat Italian Sausage, cut into thin slices
  • 1/4 cup balsamic vinegar
  • 2 tablespoons dijon mustard
  • 1 tablespoon olive oil
  • 2 cans (16oz each) cannellini beans, rinsed and drained
  • 2 sweet peppers, cut into 1 inch cubes or strips
  • 1 large red onion, dinced
  • 1/4 cup italian parsley, chopped
  • pepper to taste

Directions
  1. Saute sausage in a skillet for about 8 minutes.
  2. In a large bowl whisk together vinegar and mustard; whisk in oil.
  3. Stir in beans, red peppers, onions, parsley and pepper
  4. Add sausage and toss.
  5. Can be made ahead and refrigerated.
  6. This is a low cal dish.

Wow! This sounds great. I am saving this one.


This sounds really good! Sausage and beans just go together! Have you tried adding stock to make it into a bean soup? That sounds like it would be good too!


A good glass of wine, a summer day by the Spanish Steps in Rome, and this sounds perfect.


Do you serve this cold? I think it sounds good either way. It has been so hot down here this summer that a cold dish would be refreshing.
