How to make it

  • Saute sausage in a skillet for about 8 minutes.
  • In a large bowl whisk together vinegar and mustard; whisk in oil.
  • Stir in beans, red peppers, onions, parsley and pepper
  • Add sausage and toss.
  • Can be made ahead and refrigerated.
  • This is a low cal dish.

    Do you serve this cold? I think it sounds good either way. It has been so hot down here this summer that a cold dish would be refreshing.

    This sounds really good! Sausage and beans just go together! Have you tried adding stock to make it into a bean soup? That sounds like it would be good too!
