Grandma Bettys Gingerbread Cake Recipe

Ingredients

1 cup butter

1 cup sugar

1 cup molasses

3 well beaten eggs

2 cups flour

1 teaspoon powdered ginger

1/2 teaspoon cinnamon

1 cup boiling water + 2 teaspoons baking soda

Directions

Cream butter and sugar until light and fluffy.

Add eggs and molasses and combine well.

Alternately add boiling water mixture and dry ingredients. (Make up water mixture just before you use it)

Pour into greased 9X13 pan. (metal is better, edges dry in glass)

Bake for 30 minutes at 350F, or until toothpick comes out clean/dry.

Serve warm with whipped cream (only very lightly sweetened)

Goes well with a fall dinner.

I don't know, I'll have to ask my Mom. I won't date my Mother & Grandmother, but I'm 26... I could guesstimate the recipe at 50 or 60 years, but thanks for getting me thinking! I look forward to digging up the origins!
