seafood stuffed chicken breasts

- 1 whole boneless skinless chicken breast (both sides of breast bone) shopping list
- 4 oz of bay scallops shopping list
- 1/2 box of chicken flavored stuffing mix shopping list
- 1 pkg of shake and bake chicken mix shopping list
- 2 cloves garlic minced shopping list
- 1 shallot finely diced shopping list
- 1 tlbs finely chopped Italian parsley shopping list
- 1 tlbs unsalted butter shopping list
- 1 tlbs olive oil shopping list
- 1 lemon shopping list
- salt & pepper shopping list
- toothpicks shopping list
How to make it
- begin by preparing the stuffing per the directions on the box
- chop scallops in to pieces that will incorporate well with the stuffing
- melt butter and olive oil in a small saute pan
- saute garlic and shallots in oil until translucent
- add scallops and cook for a couple of minutes
- add parsley and the juice of one lemon and season to taste with salt and pepper
- cook thoroughly and remove from heat, about another 2 minutes
- mix the cooked stuffing in with the scallops and set aside to cool
- while the stuffing is cooling, divide the chicken breast in to 2 equal halves (2 pieces)
- pound the chicken to about a 1/8" thickness
- season both sides of the breast with salt and pepper
- in a separate dish empty packet of shake and bake mix
- add half of the stuffing mix to each breast, roll or close on to itself and secure tightly with toothpicks.
- moisten the chicken breast with a little water and coat in the shake and bake and place on a non-stick baking sheet.
- let chicken rest in the refrigerator for about 30 minutes.
- preheat oven to 400 per shake and bake box directions
- bake in oven for about 20-30 minutes until juices run clear.
- remove from oven and let rest about 5 minutes. slice each breast in half and enjoy!
- would go excellent with a lemon butter sauce as well!
