Ingredients
  • 1 whole boneless skinless chicken breast (both sides of breast bone)
  • 4 oz of bay scallops
  • 1/2 box of chicken flavored stuffing mix
  • 1 pkg of shake and bake chicken mix
  • 2 cloves garlic minced
  • 1 shallot finely diced
  • 1 tlbs finely chopped italian parsley
  • 1 tlbs unsalted butter
  • 1 tlbs olive oil
  • 1 lemon
  • salt & pepper
  • toothpicks

Directions
  1. begin by preparing the stuffing per the directions on the box
  2. chop scallops in to pieces that will incorporate well with the stuffing
  3. melt butter and olive oil in a small saute pan
  4. saute garlic and shallots in oil until translucent
  5. add scallops and cook for a couple of minutes
  6. add parsley and the juice of one lemon and season to taste with salt and pepper
  7. cook thoroughly and remove from heat, about another 2 minutes
  8. mix the cooked stuffing in with the scallops and set aside to cool
  9. while the stuffing is cooling, divide the chicken breast in to 2 equal halves (2 pieces)
  10. pound the chicken to about a 1/8" thickness
  11. season both sides of the breast with salt and pepper
  12. in a separate dish empty packet of shake and bake mix
  13. add half of the stuffing mix to each breast, roll or close on to itself and secure tightly with toothpicks.
  14. moisten the chicken breast with a little water and coat in the shake and bake and place on a non-stick baking sheet.
  15. let chicken rest in the refrigerator for about 30 minutes.
  16. preheat oven to 400 per shake and bake box directions
  17. bake in oven for about 20-30 minutes until juices run clear.
  18. remove from oven and let rest about 5 minutes. slice each breast in half and enjoy!
  19. would go excellent with a lemon butter sauce as well!

This sounds really good. I've never used Shake 'n' Bake, but I can use my own coating. Thanks for the post.


Now those are some flavors I could love all mixed together - nice "cleaning out" job! I probably have the same ingredients in my pantry, so this will be a good "rescue" cause - thanks!
