How to make it

  • Place bacon in a large, deep skillet.
  • Cook over medium-high heat until evenly brown.
  • Reserve 1 tablespoon of drippings.
  • Drain bacon, chop, and set aside.
  • Heat the bacon drippings in the skillet over medium heat.
  • Saute the zucchini, corn, and onion until tender but still crisp, about 10 minutes.
  • Season with pepper.
  • Spoon vegetables into a bowl, and sprinkle with chopped bacon and shredded cheese.

    I had this recipe cut out to make and was going to post it here, but then found it was already here! No sense in the double post, I guess. This was super easy. I actually used some ready cooked bacon as I had a box because it was on sale. So, that made it all the quicker! Left off the cheese so it would be more "healthy." Frankly, I don't think it needs it at all. Added my picture.
