Ingredients
  • 2-1/2 pounds beef chuck with bones
  • 1 veal kidney
  • 1/4 pound ham cubed
  • 1/4 pound hot dogs sliced
  • 2 tablespoons butter
  • 6 cups water
  • 2 white onions chopped
  • 1 tablespoon capers
  • 1/2 cup black olives pitted and chopped
  • 2 tomatoes peeled and chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon white pepper
  • 2 bay leaves
  • 1/2 lemon sliced
  • 4 ounces pickled mushrooms
  • 2 dill pickles julienned
  • 6 tablespoons flour

Directions
  1. Cook beef in water for 1-1/2 hours to make rich broth.
  2. Slice veal kidney into edible slices and dredge in flour then brown in butter.
  3. Brown onions in butter as well.
  4. Stir ham, hot dog slices, kidney and onions into beef stock and cook 20 minutes.
  5. Add remaining ingredients and cook another 15 minutes.
