This recipe came to me from Edith Vanocur, in 1976. She was the food editor of the Washington Post, and loved to cook. This is traditional Hungarian goulash.

  • Szeged Gulyas (Goulash)
  • main dish
  • 4 slices bacon
  • 1 each onion; thinly sliced
  • 1 lb sauerkraut
  • 1 teaspoon caraway seeds
  • 1 cup white wine; or stock or water
  • 2 1/4 lb onion; chopped
  • 3/4 lb beef, round steak; cubed
  • 3/4 lb, each pork and veal; cubed
  • 2 cloves garlic
  • 3 each tomato; chopped
  • 3 tablespoon paprika, hungarian
  • 1 cup stock

Directions
  1. There are 2 sections
  2. First section in the ingredient list: (Sauerkraut mixture) with ingredients
  3. from bacon to whiite wine;
  4. Second section of the ingredient list (GULYAS) which is from the white wine
  5. to the end.
  6. Make the gulyas: saute the chopped onions, add the meat, garlic, tomatoes,
  7. paprika, and 1/2 of the stock. Simmer 1 1/2 hrs. Add remaining stock during
  8. cooking and add water if needed.
  9. Saute the thinly sliced onions, add bacon, sauerkraut, caraway seeds and
  10. heat through. Combine with the gulyas and simmer for 10-15 more mins.
  11. Serve with mashed potatoes.
