How to make it

  • Preheat oven to 450°F. Toss green beans, bell pepper and oil in a large bowl. Add orange zest, salt and crushed red pepper to taste; toss to combine. Spread on a large baking sheet. Roast the vegetables, turning once halfway through cooking, until tender and slightly wilted, about 15 minutes.

    Hi Mystic,
    Was looking for a red and green for a party this weekend and I think yours is the one. Have you modified it since you published it? I'm thinking blanch the greenbeans to make them greener. How do you manage to retain the freshness of the orange? I’m thinking mix orange zest with parmesan and sprinkle before serving.
