Ingredients
  • 1 1/4 cups all-purpose flour
  • 1 cup yellow corn meal
  • 1/3 cup sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 1/4 cups pumpkin ( you can use Libbys solid pack pumpkin)
  • 1/3 cup milk
  • 1/4 cup vegetable oil

Directions
  1. Combine flour, cornmeal, sugar, baking powder and salt in large bowl. Beat eggs, pumpkin, milk and oil in medium bowl until combined. Add to flour mixture, mix thoroughly. Spoon batter into greased 12 cup muffin pan.
  2. Bake in preheated 375F oven for 25 to 30 minutes or until wooden pick inserted in center comes out clean.
  3. Serve warm.
