Banana Cream Pie

- 1 nine inch pre-baked pastry shell shopping list
- 3 tablespoons cornstarch shopping list
- 1 2/3 cups water shopping list
- 1 14oz. can sweetened condensed milk shopping list
- 3 egg yolks beaten shopping list
- 2 tablespoons butter shopping list
- 1 teaspoon vanilla extract shopping list
- 3 medium bananas sliced into circles shopping list
- lemon juice (to dip bananas in) shopping list
- 1 cup heavy whipping cream shopping list
- 1-2 tablespoons confectioners sugar shopping list
How to make it
- In saucepan disolve corn starch in water
- Stir in sweetened condensed milk and egg yolks
- cook and stir constantly til thick and bubbly( don't leave it alone or it will scorch! Be patient it will get thicker)
- remove from the heat
- add butter and vanilla cool slightly
- slice the bananas, dip in lemon juice, drain, then lay on paper towel
- arrange 2/3 of the dipped bananas on the bottom of the PRE BAKED pie shell (save 1/3 for the topping)
- pour filling over bananas
- chill until set several hours (or even overnight)
- whip the heavy whipping cream until stiff adding the confectioners sugar about half way through the process
- Spread the top with the whipped cream
- Arrange the 1/3 bananas on top of the pie
- This pie is a sure bet!
